- 1 lime, juiced
- 1/4 cup honey dijon dressing, low fat, low carb
- 1 dry shallot, chopped
- 1 pinch tarragon, dried
- 1/4 yellow pepper, diced
- sea salt & pepper, to taste
- In a small sized bowl, mix together lime juice and tarragon; set in fridge overnight.
- Add in shallots, lime zest, honey vinaigrette and bell peppers to the bowl and mix well.
- Add bowl contents to a blender and blend for approximately 15 seconds or until desired consistency is reached.
- Add sea salt and pepper to taste.
- Ready to serve!
