- 2 cups radishes, halved
- 1-2 tsp olive oil
- 2 tbsp fresh parsley, chopped
- sea salt & pepper, to taste
- Preheat oven at 400°F
- Begin by trimming the radishes and then cut them into halves.
- In a medium sized bowl, toss together radishes, olive oil, parsley, sea salt & pepper.
- Place radishes on a roasting pan in a single layer and roast until tender and crispy (approximately 45 minutes).
- Toss radishes at the half way mark to ensure they are cooked evenly.
